How-to guide summary
Cream Cheese — Inspired by Mad Millie’s official cream cheese guide — about 400 g, ready in roughly 30 hours.
Use with milk, cream, calcium chloride and rennet. The culture helps acidify and develop the fresh cheese body before draining and seasoning.
- Warm milk and cream to around 22°C and add calcium chloride.
- Add Fresh Cheese Culture and diluted rennet, then leave to set at around 20°C.
- Transfer the curds to cheese cloth and drain until the desired body is reached.
- Mix smooth and season with salt, herbs or savoury additions.
