How-to guide summary
Cheddar-Style Hard Cheese — Inspired by Mad Millie’s official cheddar guide — 500 g cheese, ready in about 6 weeks.
Use with warmed full-fat milk, calcium chloride and rennet. The culture is added before rennet, followed by curd cutting, gentle heating, draining, salting, pressing, air-drying and ageing.
- Sterilise equipment thoroughly before starting.
- Warm full-fat milk to around 32°C, then add calcium chloride and culture.
- Rest, add diluted rennet, cut the curd and gently heat while stirring.
- Drain, salt and press the curds, then air-dry, wax and age for full flavour.
