Description
The Alcotec 48 Hour Turbo Yeast is renowned for its dual-use capabilities, allowing users to choose between rapid fermentation or a higher alcohol yield simply by adjusting the amount of sugar used.
- Fast Fermentation (14% ABV): By adding 6 kg of sugar to a 25-litre wash, it can achieve around 14% alcohol by volume (ABV) in just 48 hours.
- High Alcohol Yield (up to 20% ABV): Using 8 kg of sugar (or 9 kg of dextrose) in the same volume will result in a higher concentration of up to 20% (or occasionally 21%) ABV, with fermentation taking around 5-6 days (sometimes up to 10 days depending on ambient temperature).
Key Features - Temperature Tolerance: This yeast strain is temperature tolerant, performing well in a range of 20-30°C (68-86°F), which makes it a reliable choice for various ambient conditions.
- Complete Nutrient Blend: The sachet contains a precisely composed nutrient mix, including nitrogen sources, pH regulators, trace minerals, vitamins, and anti-foaming agents, ensuring robust yeast health and a smooth fermentation process.
- Purity: The formulation includes mineral absorbents (such as bentonite in some variants) to help filter out unwanted compounds, which results in a cleaner wash with less off-flavours and smells.
- Ease of Use: The instructions are straightforward: dissolve the sugar in warm water, top up with cold water to the final volume at the correct temperature (around 25°C), and stir in the yeast.
Instructions for Use - Prepare Water: Pour 21 litres of water at 40°C into your fermenter.
- Add Sugar: Add 6 kg of sugar for 14% in 48 hours, or 8 kg for 20% in 5-6 days, and mix well until completely dissolved.
- Top Up: Top up to the final 25-litre volume with cold water, ensuring the liquid temperature is around 25°C before adding the yeast.
- Add Yeast: Stir in the contents of the Alcotec 48hr sachet for one minute.
- Ferment: Leave to ferment within the recommended temperature range (ideally 20-30°C).
- Airlock Note: Do not use an airlock during the vigorous initial fermentation phase.
After fermentation, using a clearing agent like Alcotec Turbo Klar is recommended to remove remaining yeast cells and impurities before distillation or consumption.

Mixing Instructions
Part B: After 1 hour, slowly pour Part B evenly over the top of the wash while stirring gently to help spread it evenly. Do not stir vigorously as this will disrupt the clearing process. Leave to clear for at least 24 hours. During this time Part B will drop down from the top, taking unwanted yeast and other compounds with it to the bottom.
